This is when the olives are still green in color, full of healthy antioxidants and polyphenols. Casa Astrid does not go for volume but for a quality healthy product. The four enemies of extra virgin are light, oxygen, temperature and time. This is why Casa Astrid&#8217;s EVOO is bottled in stainless steel bottles or Ecopacks that do not let the light through.
