What about heated olive oil?

If you use olive oil for hot preparations, you should be careful with your choice. Olive oil contains a lot of omega-3 fatty acids and just these fatty acids undergo a transformation when heated. Specifically, this means that you can no longer enjoy the health benefits with certain types of heated olive oil. So no reason to pour your extra-virgin olive oil into the pan, for hot preparations go for a “virgin” variety.

For cold cooking, we recommend using a high quality oil, the antioxidants and omega-3 fatty acids that this extra virgin olive oil contains provide all the positive effects we have described. Also, stirring a spoonful of olive oil into your salad or pasta can do wonders for the flavor!
