Spaghetti with olive oil and garlic

Ingredients

  • 400 grams of spaghetti
  • 200 ml extra virgin olive oil
  • 3 cloves of garlic, finely chopped
  • 1 red chili pepper, finely chopped
  • A handful of parsley, finely chopped
  • Salt
  • Basil or oregano

Preparation

  1. Cook the spaghetti in salted water until al dente
  2. Heat the olive oil over low heat and sauté the garlic for 1 to 2 minutes, stirring well in the pan with a wooden spoon to diffuse the flavor of the garlic through the olive oil. Add 2 tablespoons warm water to the pan and stir in the chili pepper and parsley. Season with salt and cook for 3 minutes, stirring occasionally. Add basil or oregano to taste.
  3. Drain the spaghetti briefly, leaving it still moist, then add it to the sauce. Gently stir in the sauce and spaghetti and cook over low heat for 1 more minute.
  4. Serve on warm plates
